Vietnamese cuisine has three main styles which originated in three regions of the country, the central part, the southern part, and the northern part. Each one of these regions is home to dishes with distinct flavors. The northern cuisine is characterized by its traditional style with strict selection of spices and other ingredients. The southern cuisine has Chinese influences on account of large Chinese immigrant population; is more exotic, and uses a variety of herbs. The central cuisine has many side dishes; has its own spiciness compared to both the northern and the souther styles. It is always a good idea of enjoy the exotic dishes of Vietnam, while you are in Vietnam. You should also try to have the regular staple food which a Vietnamese family generally eats. A typical Vietnamese meal include a bowl of rice, roasted meat or fish, a bowl of canh (vegetable broth, often cooked with meat), and fish and/ or soy sauce. Any good restaurant will happily serve you these regular Vietnamese foods.
While in Vietnam, a tourist or a business visitor has many choices. For instance, Vietnam's largest city, Ho Chi Minh City, has a number of good restaurants with dishes from across the world - Chinese, French, Indian, Italian, Japanese, Thai, and of course, continental and Vietnamese. Moreover, you have a choice of hundreds of street side stalls and cafes.

- Some Useful phrases - Most of the Vietnamese foods contain fish and meat though you may also get vegetarian food. It is useful to learn some phrases which a vegetarian may use while ordering food in restaurants:
- an chay means vegetarian
- com chay means vegetarian food
- nha hang com chay means vegetarian restaurant
- rau means vegetable
- khong co trung means no eggs
